Thursday Traditions: Hummingbird Cake

A true Southern specialty, this little known cake (outside of the South, that is) is incredibly delicious! Moist layers filled with pineapple, banana and pecans, held together with salty-sweet cream cheese frosting make for the perfect summer cake! As Amber at Bluebonnet & Brownies writes, "Rumor has it the cake’s name comes from its over-the-top sweetness – so sweet that there’s no way a hummingbird could resist it’s sugary lure." Usually a three-layer cake, this dessert is dressed to impress. High in natural fiber from all of the fresh fruit, nuts and sometimes coconut (yum!) this cake is fundamentally an American treat and a reason to celebrate all on its own.
