French toast is probably the quintessential breakfast comfort food - it screams breakfast in bed, sleeping in late, going out for brunch - and now, it also screams "gluten free"! The key to French toast is always the bread -- from homemade to storebought, fluffy pre-sliced white bread to crusty loaves of French pain, it all starts here. In addition to the roundup of my 5 favorite gluten free fruity French toast recipes, I also wanted to highlight my two favorite foundations: softy, fluffy challah and goold ol' sandwich bread. For gluten free challah, this recipe is my absolute favorite. As Kara at Gluten Free In The Greens writes, "Gluten-free challah represents somewhat of a Holy Grail for gluten-free Jews." Or in this case, anyone who wants good French toast. Her recipe is fantastic (but it does require a special pan!) and her blog is just delightful. As far as sandwich bread, you have plenty of choices -- at the end of the day, I prefer Udi's Gluten Free sandwich bread -- it's a healthy whole-grain blend, available nationwide and I'll be darned if it's not the best untoasted gluten free bread I've ever purchased.
