A vegetarian burrito can take a Meatless Monday wine pairing in a zillion different directions. It's all about what's in the filling. With plenty of green, herbaceous flavors inside this burrito (cilantro, oregano, tomatillo salsa), I'm thinking a Sauvignon Blanc would be perfect. And, in my book, a causal meal calls for a casually priced wine, so why not seek out a Sauvignon Blanc from Chile?
