This red,white, and blue potato salad from Slim Pickin's Kitchen is a must-have side dish at your 4th of July celebration. Heirloom Peruvian red, white, and blue potatoes form the basis of this salad (available at farmer's markets or Latin grocer). Instead of a traditional mayonnaise based dressing, the recipe calls for bacon (and some of its drippings) along with apple cider vinegar, olive oil, and herbs.
