Pecan Sandies are a delicious old fashioned cookie. This buttery cookie will melt in your mouth. The dough is made with powdered sugar, finely chopped pecans and of course a good amount of butter. This nostalgic sweet is just as addicting as an adult as when you were a kid.
Ingredients:
1 cup sugar
1 teaspoon cream of tartar
1 cup chopped pecans
1 cup powdered sugar
1 cup butter
1 cup oil
2 eggs
1 teaspoon vanilla
4 1/4 cups sifted flour
1 teaspoon salt
1 teaspoon soda
Directions:
In a large bowl, whisk flour, salt, and baking soda. Set aside.
In a separate large bowl, beat butter with sugars and oil until well combined. Beat in eggs and vanilla. Gradually add in flour mixture, beating just until combined. Stir in the chopped pecans. Cover and chill the dough for at least 30 minutes.
When ready to bake, preheat the oven to 375 degrees F. Drop by tablespoonful of dough onto a cookie sheet and bake for about 10 minutes, until light brown in color.
