The barbecue isn't just for burgers, chicken and steaks. Throw on some corn on the cob and make this delicious summer salad. If you have a grilling basket toss in sliced red onion and whole sweet cherry tomatoes (otherwise, throw them in a slightly oiled cast-iron skillet), and cook until the tomatoes are nicely blistered, tossing frequently. Once the corn is nicely grilled on all sides cut kernels from cob. Transfer these grilled goodies to a deep serving plate or bowl and add a good amount of sliced or torn fresh basil leaves. Season with salt and pepper and serve warm or cold.
