Carrot cake is a lovely way to end a dinner unless you are gluten free. Traditional cake is out of the questions and you may think you will never get a chance to taste this delicious dessert. Now we offer you a Gluten Free version!
2 1/2 cups carrots, finely grated or chopped
2 cups blanched almond flour
1 cup tapioca flour
1/2 teaspoon xanthan gum
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon sea salt
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
4 eggs
2 teaspoons real vanilla extract
