Five-Minute Fried Rice for One
Ingredients:
1 tbsp canola oil, coconut oil, or other vegetable oil
½ cup kale leaves, chopped
5-6 cherry tomatoes, halved
2 stalks celery, sliced into C’s
¼ cup frozen corn
1 clove garlic, minced
1 cup cooked rice (brown or white)
1 egg, cracked into a small bowl and lightly whisked with a fork
2 tbsp soy sauce (can be low-sodium)
1 tsp sesame oil
scallions, sliced thinly on the bias (for garnish)
