Baked eggroll enchiladas from Taste and Tell are a quick and easy meal. Flour tortillas are filled with seasoned ground beef, refried beans, cheese and enchilada sauce before being rolled up and baked in the oven. If you are not counting calories, you can crisp up these enchilada pockets in the deep fryer. Serve with a side of sour cream and homemade guacamole for dipping.
