I am constantly looking for ways to reinvent carrot cake. Don't get me wrong, I love the moist layers of cake surrounded in cream cheese frosting but sometimes I want something a little smaller, a little lighter. That's where these carrot cake truffles come in. They are bite-sized sweets that symbolize spring and Easter.
