Strawberries are one of many kids' favorite foods. Even adults never lose that desire for a fresh strawberry, warm from the sun.
Unfortunately, not many of us get to experience the joy of picking strawberries right from the ground. It's too bad that this type of food gathering has lost it's appeal. I have many good memories of running through the berry farm rows in Upstate NY, picking a few berries and eating dozens more.
If you are lucky enough to get some fresh berries from the farmers market, use them to make a simple strawberry jam. It's going to taste better than anything you buy off the shelf, and opening a jar of homemade jam tastes like a warm summer day; especially in the cold of winter.
Back in the day, jam was made and sealed with melted wax. This is not considered very safe in modern times. A quick and easy way to make strawberry jam, is to freeze your freshly made jam right in the jar, Be warned,it won't last long once your kids get their first taste.
Strawberry Freezer Jam (adapted from the Sure-Jell package)

2 cups of fresh firm strawberries
4 cups sugar
3/4 cup water
1 package Sure-Jell Fruit Pectin
1. Crush strawberries and measure 2 cups exactly
2. Stir in sugar and stir to coat evenly. Let sit for 10 minutes
3. In small pan, dissolve Sure-Jell in the water. Bring to a boil for 1 minute
4. Add fruit and return to a boil for 3 minutes
5. Pour into sterilized jars, leaving 1/2 inch space below the rim of the container.
6.cover and allow to cool to room temperature
7. Keeps in fridge for up to 3 weeks, or freeze for up to 6 months
Tip: To sterilize jars, pour boiling water over and inside of clean jars, then place upside down on clean kitchen towels, until ready to use.
