There’s no better way to celebrate Peruvian Independence Day, July 28, than with one of our favorite cocktails, the Pisco Sour. Pisco is a grappa-like liquor distilled from pomace (or pressed grapes) and was created by Spanish settlers in the 16th century. Today, it is the national spirit of Peru but it's also gained popularity around the world, most popularly as a sour cocktail. Our friend Nico, author and photographer of the beautiful blog Pisco Trail shared his recipe for a classic Pisco Sour, but also takes us on a trip around the world to explore variations of this splendid cocktail. Yerba Mate Pisco Sour

Makes 1 serving
3 oz. Pisco
1 oz. lime juice
1 oz. simple syrup
1/2 oz. egg white
Ice
Angostura bitters
Mix all the ingredients in a blender, and add enough ice to double the volume of the liquid mixture.
Blend until the ice is crushed.
Serve and decorate with 3 drops of Angostura bitters.
