Even if the wee ones say they don’t like broccoli, they’ll love it when it’s smothered in a creamy, cheesy sauce! This dish is a great way to use up leftover chicken (or try turkey after Thanksgiving!), or simply buy a rotisserie chicken at the market to save time in the kitchen. If you’re using frozen broccoli, just make sure it’s thawed before combining it with the rest of the ingredients. This comforting dinner is a cinch to put together and is ready in less than 30 minutes.
Cheesy Chicken and Rice Casserole with Broccoli
Serves 4
Ingredients:
Cooking spray or butter
2 cups cooked chicken (leftover or rotisserie)
2 cups broccoli florets, cut into bite-sized pieces
1 can cream of chicken soup
1/2 cup mayonnaise
2 cups cooked rice
2 cups shredded Cheddar cheese, divided
Salt and pepper to taste
Directions:
Preheat oven to 350 degrees.
Coat the inside of a baking dish (8x8 or 9x9) or individual ramekins (like we used) with cooking spray or butter.
In a medium bowl, combine chicken, broccoli, soup, rice and half the cheese. Season to taste with salt and pepper.
Stir until combined then pour into the baking dish.
Top with the remaining cheese and bake for 30-35 minutes or until casserole is heated through.
