Whenever I ask one of my chef friends what they love to cook at home the answer is invariably soup. It’s a dish that can be simple or complex, but it's always comforting. We eat soup when we feel ill, tired, cold, or when we need a hug after a particularly rough day. Indeed, soup is like a hug from the inside. This month is National Soup Month so I’m celebrating with some of our favorite bowls. This delicious Light and Chunky Chicken Soup with rice (or add noodles, if you prefer) is the perfect soup if you’re feeling under the weather. A good Creamy Broccoli Cheddar Soup will definitely take the chill off, as will the New England Clam Chowder. Make it a hearty meal and serve it up in sour dough bread bowls. On the lighter side, try the Turkey Meatball and Vegetable Soup or the Tuscan Tomato Bread Soup. My personal favorite? The spicy Tom Yum, a Sweet and Sour Thai Soup.
And if you just need that inner hug, well, any of these soups will do the trick.
