This Valentines Day, why not make a dessert that says how much you truly love all your little chefs? These mini cakelettes are just the thing for every chocolate lover in your house. We adore them for their sweet little size, but also for the recipe itself. It's quick and easy because you start with a good Devil's Food Cake mix, and then you ramp up the flavor with all sorts of extras. Make it as romantic or fun as you want, and customize this tasty dessert for the perfect Valentines Day treat.
Much better than a simple box of chocolates, you can customize these for grown ups by adding a drizzle of liqueur before the tasty ganache layer as well.
1 box Devils Food cake mix
(all ingredients called for on the box)
Chocolate Raspberry Ganache
1/3 cup heavy cream
1 cup semi-sweet chocolate morsels
2 tbs unsalted butter
1/4 cup seedless raspberry preserves
White Chocolate Drizzle
1 cup white chocolate morsels
1 tsp vegetable shortening
(and you may need more shortening, but add it in 1/4 tsp amts)
If you have never tried Ganache, it's a silky delightful layer of chocolate that melts the moment it hits your mouth. It's never too thick or too sweet, and it does take a bit of trial and error to make it yourself. We found a great video that walks you through the steps. If you aren't lucky enough find it already made at your favorite specialty store, then try the following video recipe. Always use the best chocolate you can find and we do recommend adding the rum.
