Green chile tortilla pie is a simple dish that can be enjoyed for any meal of the day. This recipe is a cross between a quiche and a frittata, the flour tortilla acts as the crust so you won't have to fuss with dough. You can make an extra pie and freeze it to enjoy at a later date.
Green Chile Tortilla Pie
Ingredients:
olive oil cooking spray
one 10 inch flour tortilla
2 cups shredded Mexican cheese
1/4 cup chopped red bell pepper
1 4-ounce can roasted chopped green chiles, drained
2 tbsp finely chopped fresh cilantro
3 large eggs, beaten
1 cup low fat sour cream
1/4 tsp ground cumin
kosher salt and freshly ground black pepper
Directions:
Step 1: Spray a 9 inch pie plate with olive oil cooking spray and set aside. Preheat oven to 350 degrees Fahrenheit.
Step 2: Place the flour tortilla at the bottom of the pie plate. Spread 1 1/2 cups cheese over the tortilla along with the chopped green chiles, red bell pepper, and cilantro.
Step 3: In a medium sized mixing bowl, whisk the eggs, sour cream, cumin, salt and pepper until well combined. Pour the mixture over the tortilla and cheese. Sprinkle the remaining 1/2 cup of cheese on top.
Step 4: Bake the pie for 35 to 40 minutes or until the center is firm. Remove from oven and let cool before serving.
