Beautiful bright green stalks of asparagus line the stands at farmers markets. They range from thick and study to pencil thin, each one specially cultivated for a particular purpose. Asparagus can be prepared simply by sauteeing in a bit of olive oil and garlic or transformed into a silky soup with the help of a potato. This versatile spring vegetable may come in abundance this time of year, but its season is short lived. Strike while the iron is hot and cook as many asparagus centered dishes while you can!
