Your Grandma's Rhubarb Jam

Rhubarb is one of the first spring vegetables to appear at the market.  Yes, you read that right - a vegetable.  While those reddish green stalks are botanically classified as a vegetable, it is often paired with sugar and used in desserts.  One of the classic ways to cook rhubarb is to turn it into jam.  This recipe has four ingredients and is as simple as it gets.  Chopped rhubarb is cooked down with sugar and candied orange until thick and syrupy.  The mixture is promptly transferred to jars and stored for later use.  Homemade rhubarb jam can be used as a spread for scones or a filling for bars or pie.  If you've never tasted rhubarb, jam is a good introduction.

Ingredients:

8 cups rhubarb, chopped
4 cups sugar
1 pound orange slice candy, chopped finely
red food coloring
