Port and Garlic Chicken
Ingredients
6 chicken drumsticks
15 cloves of garlic, with skins on
1 glass of ruby port
Olive oil
Salt and pepper to taste
Preparation

Heat some olive oil in a pan. Add the garlic cloves and cook on low until lightly caramelised.

Season the chicken with salt and pepper, add to the pan and fry until browned on both sides.

Pour the port over the chicken and set it aflame. Once the flame dies down, cover, lower the heat and continue cooking.

When done halfway through, remove the lid and turn up the heat. Cook until the port has reduced to a syrupy sauce and the chicken is completely cooked through.

This recipe is a riff on The Urban Peasant James Barber's chicken with garlic and sherry. The garlic turns sweet and earthy and makes a great spread on crusty bread.
