Wild Mushroom Tartlets

Ingredients

3 shallots quartered and peeled
2 cloves garlic finely chopped
1/4 cup butter
2 teaspoons olive oil
2 ounces goat cheese
1 teaspoon chopped rosemary
1 teaspoon chopped dill

Preparation

Heat butter in frying pan and caramelize shallots

Set shallots aside and heat olive oil in pan

Chop mushrooms into quarters and heat in pan

Add rosemary, dill, garlic, salt, pepper, a squeeze of lemon juice and cook for 5 minutes

Roll out the pastry into pie dish and prick with fork (prebake for 5 minutes optional)

Add mushrooms, shallots and broken pieces of goat cheese

Bake at 350° for 30 minutes or until crust is golden.
