Taiwan Pickles

Ingredients
1 English cucumber, halved lengthwise, sliced (or, garden-variety cucumber, peeled and seeded)
salt, (to taste)
1 tablespoon sesame oil
1 teaspoon chili oil, (or to taste)
1 tablespoon rice vinegar
Preparation

Place sliced cucumbers in serving bowl and sprinkle with salt to taste.

Mix dressing ingredients in a small bowl and pour over cucumber slices. Stir to coat.

Sprinkle with dried chilies to taste. Stir.

Serve cold.

About
Just as you put Parmesan cheese on your spaghetti Bolognese, in Taiwan they put pickles on everything from soup to stinky tofu. It adds flavor, and color to the dish.
This dish can, and should, be made a few hours in advance. You can also play with the recipe, using any number of vegetables from Chinese eggplant to cabbage.
