These copycat Hostess chocolate cupcakes from Chocolate Covered Katie are delicious and even a bit healthy. Hostess cupcakes are a snack from our childhood, a chocolate cupcake filled with "cream" and topped with chocolate frosting and a white swirl. This version is free of trans fats and high fructose corn syrup. The cupcakes are made with applesauce and nondairy yogurt and milk to cut down on the calories. If you make these homemade Hostess chocolate cupcakes, you wont have to deprive yourself of dessert.
Ingredients:
1 cup flour (I used white-whole-wheat. You can use white or Bob’s gf.)
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp plus 1/8 tsp salt
3/4 cup sugar (see sugar note below, for sugar-free version)
1/4 cup cocoa powder (or, for a more authentic taste, use dutch-processed)
1 and 1/2 T cornstarch
1 and 1/2 tsp pure vanilla extract
1/2 cup vanilla nondairy yogurt (such as SoDelicious)
1/4 cup applesauce
3 T canola oil (click for notes about a fat-free option)
1/2 cup non-dairy milk
Ricemellow Cream (If you can’t find it, Smuckers marshmallow fluff is also vegan.)
