Bailey's mousse pie from Erica's Sweet Tooth is an Irish inspired dessert. An Oreo cookie crust is coated in chocolate glaze and topped with a light and fluffy Irish cream mousse. The mousse is made with a double boiler over the stove. If you do not own a double boiler, you can always use a pot with a metal bowl on top.
