Mini dulce de leche cheesecakes by Within the Kitchen are a Mexican inspired dessert. These handheld cheesecakes are so easy to bake especially with the help of a muffin tin. The batter is made by combining store bought dulce de leche with cream cheese, eggs, and sugar.
