Vegan quinoa salad from Omaha Steaks is delicious and nutritious. Quinoa is a traditional Peruvian seed that is packed with protein. One cup of quinoa contains approximately 8 grams of protein which is more than one large egg. You can toss whatever vegetables are in your fridge in the salad. Use this recipe as a guideline.
1 cup cooked quinoa
½ cup almonds
1 cup celery
2 green onions
¼ cup dried cranberries
½ cup mandarin oranges
1 cup spinach
1 cup butter lettuce
¼ cup white balsamic vinegar
3 tablespoons water
2 tablespoons lime juice
1 teaspoon fresh ginger
1 tablespoon soy sauce
1 tablespoon coconut nectar (optional)
