Fresh and unbelievably easy, this fig and gorgonzola appetizer is the perfect beginning to a summer party. Tender, rich figs and topped with the unforgettable tanginess of mouthwatering Gorgonzola cheese. They are extra simple and can be made ahead of time. So tasty! Fresh Fig and Gorgonzola Bites

5 Figs, cut in half
3 oz. Soft, un-aged Gorgonzola...or your favorite soft blue cheese
4 tablespoons Balsamic Reduction (Try: Tesoro di Modena Organic Balsamic Creme, available at Whole Foods or online)
3 tablespoons Fresh Chopped Mint
