We have been exploring recipe reinventions of classic summertime desserts including blueberry pie and strawberry shortcake and now we broache the subject of peach pie. This Southern native is as traditional as it gets. Juicy summer peaches are combined with a little bit of cinnamon and sugar before being tucked into a homemade pie crust. While you can certainly cover your pie with an unadorned top crust, there is something quaint and inviting about the lattice crust. It allows the diner to see the peach slices peaking through the weaved crust.
There is some debate whether to peel peaches or not before baking a peach pie but I say it's necessary. The skin can sometimes be tough against the flesh and, for me, cause an undesirable textural contrast. Yes, it's an extra step in the cooking process but, in my opinion, well worth the effort. You can read on how to peel a peach here. If you take one thing away from this article, it's that you should play with your food. The old stand-bys will always be there so why not try something new?
