The days just keep getting colder! After more than 3 feet of snow today (no kidding!), nothing sounds more satisfying than a hot bowl of rich soup. The nicest thing about making a soup is the flexibility you get from the recipe. If you want to, follow each of these recipes to the letter. If going your own way is how you cook, soups are perfect, and you can consider the following just some tasty guidelines.
The only tips I can give, are to season as you go, roast or saute the vegetables before you add the stock, and don't be afraid to allow your soup to simmer all day long on low heat. If it's a cream based soup, simmer until ready to serve and add the dairy in the last few minutes before serving. Enjoy these meal stretchers, and do try each one. They are fabulous!
