Vegan Fried Rice
Ingredients
Rice:
1 cup brown rice (200 g)
2 cups water (240 ml)
Optional: 1 tbsp miso paste * (sub with 1/2 - 1 tsp salt)
Sauce:
2 tbsp tamari sauce
1 tsp coconut sugar
3 garlic gloves, minced
1 tsp fresh ginger, grated
Vegetables:
2 cups of green beans (about 200 g), I used frozen
1 onion, sliced thinly
1/2 cup sweet corn (120 g)
1 carrot, sliced thinly
Preparation

Rinse your rice and add them to a large pot with 2 cups (480 ml) of boiling water. Allow the rice to simmer on low heat for 30 minutes or until soft (cooking time will depend on your type of rice).

Mix all of the ingredients for the sauce in a small bowl.

Chop the carrots, onion and garlic and mix them with the green peas. Cook it on high heat for 3-5 minutes - add a splash of water if it starts sticking to the bottom.

Turn the heat down to medium and add the sauce to the vegetables and mix until all the vegetables are covered in sauce.

Add the cooked rice to the pan, mix everything together and fry for another 3-4 minutes.

Season with salt and pepper and serve.

This Vegan Fried Rice is satisfying, simple, flavourful and so delicious. It can be done in 35 minutes with only 10 minutes of prep.
