Lemon Coconut Balls

Ingredients

3/4 cup soft butter
1/2 cup sugar
1 egg
1 teaspoon lemon extract
1/2 teaspoon cream of tartar
1/2 teaspoon vanilla
2 cups flour
Lemon frosting:
3 tablespoons butter
dash salt
1 tablespoon to 2 lemon juice

Preparation

Cream butter and sugar until fluffy. Blend in one egg, lemon extract, cream of tartar, vanilla, flour and coconut. Shape into 1-inch balls. Place on ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes or until edges are lightly browned; cool and frost.

To make frosting, combine confectioner's sugar, butter, lemon peel and salt. Blend in lemon juice until of spreading consistency.
