Zighini: A Spicy Eritrean Lamb Stew

Ingredients
2 Onions, finely chopped
Butter
Oil
4 TBs berbere
3 cups water, divided
1 can diced tomato
2 pounds lamb or beef (chicken/fish works too)
Preparation

Finely chop two large onions

Fry onions in a buttermilk based butter (if possible) and a bit of oil until golden brown

Add 4 Tbsps of berbere to the onions

Add a glass (abut 8 ounces) of water till it evaporates, and repeat this three times

Add a can of diced tomatoes, a little water, and bring to the boil

Add two pounds of lamb or beef (cut into small pieces) or you can also use chicken or fish.

Cook for 45 minutes

Zighini is a spicy Eritrean stew typically consisting of tomatoes, onions and lamb or beef. It is served, along with other dishes, atop a thin pancake-like sour bread known as injera.
