Spaghetti Squash Casserole
Ingredients
1 large spaghetti squash
1 lb sweet Italian sausage
1 tsp olive oil
4 cups tomato sauce
1 onion, chopped
2 carrots, shredded
2 cloves garlic, minced
1 Tbsp Italian seasonings
1/4 cup parmigiana cheese, grated
Salt/pepper to taste
Preparation

Pierce spaghetti squash 3 or 4 times and microwave whole, for 10 minutes

Carefully remove from microwave, cut in half and remove seeds.

Shred spaghetti strands with a fork, into a large casserole dish.

In a large pan, heat olive oil over medium heat and add onions, carrots and garlic.

Cook until vegetables are soft. Set aside.

Remove casings from sausage and add to hot pan.

Break up sausage and cook until no more pink remains.

Add cooked vegetables to meat mixture.

Add sauce and seasonings(except cheese).

Heat through until bubbly.

Pour over spaghetti squash strands.

Sprinkle cheese over all.

Heat at 350 degrees, for 30 minutes.

Perfectly seasoned, this is a filling meal that uses a healthy spaghetti squash as the base. The squash absorbs the flavor nicely. Enjoy!
