Sugar-Free Almond Cookies

Ingredients
1/4 cup plus 2 tbsp. reduced-calorie butter
1 teaspoon powdered sugar substitute
1 whole egg yolk
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
1/4 teaspoon lemon extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Preparation

Cream butter and sugar substitute in a medium bowl, beating at high speed of an electric mixer until light and fluffy. Add egg yolk and flavorings; beat well.

Combine flour, baking powder and salt; add to creamed mixture, beating well.

Shape dough into 1 inch balls; place 2 inches apart on ungreased cookie sheets. Press each with a fork to flatten.

Bake at 300 degrees for 20 minutes or until edges begin to brown. Remove cookies to wire racks, and cool completely.

About
Adding chopped almonds will add a bit of fat but also will improve the flavor.

Where does one find powdered sugar substitute?
Could it just be processed splenda? Granular or the baking type? Possibly another brand?
