Backpacker's Beef Stew
Ingredients
10oz egg noodles
1/2c instant mashed potatoes
4oz beef jerky
1/2c dried peas
1c dried carrots
1/2c dried onion pieces
1/2c dried bell pepper pieces (mixed red and green)
1/2c barley
2 beef bouillon cubes
1/2 tsp oregano
1/2 tsp black pepper
1 tbsp ghee or olive oil

Preparation

Mix all the dry ingredients except the jerky into a ziplock bag and seal tightly.

Cut the jerky into very small strips. Pack separately.

On the trail, rehydrate the jerky by covering it with 4 cups of water in a water bottle while you hike.

When you are ready to cook, mix the water, jerky, and dry ingredients in your cookpot.

Bring to a boil for about five minutes.

Remove from heat and leave covered for about five more minutes.

A quick and hearty dinner that packs light and only requires boiling water to make on the trail. I dry most of these ingredients on a home dehydrator.
