Mom's Stir Fried Spaghetti
Ingredients
8 oz spaghetti
2 cups whole mushroom, sliced
1 cup green bell pepper, sliced
1 cup celery, sliced
1 cup smoked ham, shredded (omit ham if you are vegetarian)
3 tablespoons vegetable oil
1/2 cup onion, sliced
1/2 cup carrot, sliced
2 tablespoons olive oil
Ground black pepper
Cilantro for garnishing
For cooking sauce:
1/2 cup regular tomato based pasta sauce
1/4 cup soy sauce
1 1/2 teaspoons brown sugar

Cook spaghetti according to the package instruction. Typically, place spaghetti in boiled water with a pinch of salt and cook for 11 minutes.

While cooking the spaghetti, slice all the vegetables and ham. Prepare cooking sauce by mixing the ingredients together in a bowl.

When the spaghetti is done, rinse in cold water and drain. Add olive oil and stir. Set aside.

Now heat up vegetable oil in a large nonstick sauté pan over high heat. Add onion and carrot. Sauté for 1 minute until onion is translucent.

Add other vegetables and stir for 2 minutes.

Place ham and cooked spaghetti in the same pan. Add cooking sauce and a pinch of ground black pepper. Mix everything evenly. (Stirring could be a little difficult at this point because of the spaghetti. An easy way is to move all the ingredients with a spatula in one hand and a fork or a pair of chopsticks in the other hand.)

Turn off the heat. Dish, garnish with cilantro and serve.
