Oatmeal Bread
Ingredients
1 cup quick cooking oats
1/2 cup whole wheat flour
1/2 cup brown sugar
1 Tbsp salt
2 Tbsp butter
2 cups boiling water
1 pkg yeast or 2 1/2 tsp bulk yeast
1/2 cup warm water
5 cups flour
Preparation

Place oats, wheat flour, brown sugar, salt and butter, into a heat safe bowl.

Pour boiling water over all and let cool to lukewarm temperature

Dissolve the yeast in warm water and add to the cooled batter.

Continue adding flour to make a smooth, elastic dough

Knead for an additional 5 minutes.

Cover and let rise for 1 hour or until doubled in size.

Punch dough and divide in half.

Create 2 loaf shapes and place in greased loaf pans.

Allow to rise a second time, until doubled

Bake at 350 degrees for 30 minutes

I love to bake this bread when I need something for sandwiches. It also makes a fantastic toast. If you are just starting out making your own bread, oatmeal bread is a nice gateway. It is more dense than white bread, but not as heavy as another type may be.

I have made this bread a few times now and it truly is very very good. No Fail!! I would like to find the nutritional info if it is available for this bread. The loaves are beautiful and I haven't bought store bought bread since finding this recipe. Any help in finding the caloric count etc. would truly be appreciated. Thanks!
