Chard With Bacon and Balsamic Vinegar

Ingredients

6 cups chard- any variety
2 slices bacon
3 tablespoons balsamic vinegar
1 teaspoon olive oil
Salt/Pepper

Preparation

Wash chard leaves and break off any large stems

Cook bacon until crisp and remove slices from fat

Add olive oil to bacon fat and heat until it shimmers

Add wet chard leaves, stir to coat and turn off heat

Cover tightly for 5 minutes, or until chard is wilted

Chop bacon and add to wilted chard

Pour balsamic vinegar over all and toss to coat
8
Sprinkle with salt/pepper just before serving
