Ingredients

1 1/2 cups flour
1 cup sugar
3/4 cup butter
1 egg
1 tablespoon cinnamon
1/2 cup (1 stick) unsalted butter, softened
1/4 cup milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Preparation

1
Combine room temperature butter and sugar until light and fluffy. Add egg, incorporate well. Add flour and cinnamon, mix until combined.
2
Form a full tablespoon of dough into ball and place on silpat sheet or parchment paper that is on baking pan. Flour hands and press down until about 1/8 in thick. Use cookie cutter in desired shape and press down into dough. Leave cutter there, and remove excess dough. Lift up cookie cutter and repeat process.
3
For frosting, Place the butter in a large mixing bowl. Add 1 cup sugar and then the milk and vanilla. On the medium speed of an electric mixer, beat until smooth and creamy, about 3-5 minutes.
4
Gradually add the remaining sugar, 1 cup at a time, beating well after each addition. (about 2 minutes) You may not need to add all of the sugar. You will want a thick pancake batter consistency for these dessert sandwiches. Add milk to water down, sugar to thicken.
5
After cookies have cooled, you can start to assemble the sandwiches.
6
Take one circle cookie and place it on your plate or serving tray. Gently add frosting with a piping bag. Add another cookie, do another layer of frosting. Gently add final cookie.
7
Drizzle with hot fudge or melted milk chocolate.

I haven't seen a recipe from you yet that I didn't like! :)

About

This is a cinnamon sugar cookie with frosting and hot fudge drizzle.

I made this ultimate dessert with a wonderfully rich vanilla frosting.

I have no idea what I was thinking.

Its almost too sweet. Even for me.

However, right after hubby ate one, he asked me, "What was that?"

I explained it to him in great detail and he just sat there looking at me.

Uh oh.

Then he said, "That was by far the best thing I have ever tasted in my whole life. Better then any cake or cookie or cheesecake. Amazing."

That is a big compliment from my non-sweet liking husband.

I think I WILL be trying this again. :)
