Mexican-Style Lasagne
Ingredients
1 (10 oz) can enchilada sauce
1 (10 oz) can tomatoes, diced and undrained
1 (6 oz) can tomato paste
1 (15 oz) can black beans, drained
1 pint cottage cheese
3 cups cheddar cheese, shredded
scallions, sliced

Preheat oven to 375.

Add another layer of 3 noodles, remaining 1 cup cottage cheese, then sprinkle with 1 cup cheddar.

Add last 3 noodles, remaining tomato sauce, and remaining cup cheddar.
