Honey Goat Cheese Strawberry Spinach Salad
Ingredients
Champagne Vinaigrette: (enough dressing for 2 - 3)
¼ cup olive oil
2 tablespoons champagne vinegar
1 clove garlic, minced or pressed
½ teaspoon dijon mustard
¼ teaspoon salt
a pinch of black pepper
Salad:
Baby spinach
Apple, chopped (I used a Gala)
Strawberry, sliced
Walnuts
Honey Goat Cheese
Preparation

Champagne Vinaigrette:

Place olive oil, champagne vinegar, garlic, dijon mustard, salt, and pepper into a bowl and whisk until well combined.

Assembling the salad:

Place spinach and add in chopped apples, sliced strawberries, walnut pieces, and goat cheese. Top with dressing.
