Macademia Nut Ripple Muffins

Ingredients

2 cups flour
1/2 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon vanilla
For the Ripple:
1/2 cup brown sugar
1/4 cup butter
1/4 cup flour
1/2 teaspoon cinnamon

Preparation

Preheat oven to 350 degrees F.

Combine ripple ingredients in a bowl; set aside

Combine flour, sugar, salt, baking powder and baking soda in a large bowl; set aside

In a separate bowl, combine eggs, cream, oil and vanilla; mix well.

Stir dry mixture into wet mixture, then swirl in ripple.

Spoon batter into lined or greased/floured muffin tins. Bake for 20 minutes or until a toothpick inserted comes out clean.
