Avocado Tartlets

Ingredients

1 teaspoon lemon juice, strained
1 1/4 cups farmer's cheese
2 tablespoons heavy cream
50 tartlet shells
salt and pepper
50 fresh basil leaves

Preparation

Sprinkle the insides of the tomatoes with salt and place uppside down on paper towels to drain.

Peel, halve and pit the avocados. Chop the flesh, place in a food processor with the lemon juice and process to a puree.

Beat together the farmer's cheese and cream in a bowl, then stir in the avocado puree and season with salt and pepper to taste.

To serve, fill the pastry shells with the avocado mixture. Top each with a tomato half and garnish with a basil leaf.
