Light Apple Muffins

Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
cup wheat germ
1/4 cup firmly packed brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 eggs, beaten
1/4 cup skim milk
1/4 cup vegetable oil
2 cups peeled, shredded apple
1 tablespoon grated lemon rind
Preparation

Combine flours, wheat germ, brown sugar, baking powder, soda, salt, cinnamon, and nutmeg in a large bowl; make a well in the center of mixture. Combine eggs, milk, and oil; add to dry ingredients, stirring just until moistened. Stir in apple and lemon rind. Spoon into muffin pans coated with cooking spray, filling 2/3 full. Bake at 400 degrees F. for 10 to 12 minutes.
