Irish Soda Bread With Golden Raisins
Ingredients
2 1/2 cups all-purpose flour
4 tablespoons sugar
1 1/2 teaspoons baking powder
3/4 teaspoons baking soda
1 teaspoon salt
3 tablespoons unsalted butter, cubed
1 egg
1 cup buttermilk
3/4 cup golden raisins

Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

In the bowl of a mixer, such as a KitchenAid fitted with a paddle attachment, add the flour, sugar, baking powder, baking soda, and salt. Mix on low until well incorporated.

Add the butter and mix. Add the egg. With the mixer on low, slowly add the buttermilk and mix until incorporated. Add the raisins. Note, the dough will be wet.

Place the dough on a well floured surface and knead a few times adding additional flour as needed to prevent sticking. Form the dough into a round ball and place on the prepared baking sheet. If desired, lightly cut an “X” into the top of the bread with a serrated knife. Place in the oven and make for about 45-50 minutes or until firm and hollow when you tap on it.

Allow the soda bread to cool on a white rack before slicing. Serve warm with butter.
