Berry Glazed Salmon w/ Asparagus

Ingredients

3/4 cup vegetable broth
12 oz asparagus spears, ends trimmed
2, six ounce salmon fillets (frozen or fresh)
Glaze
1/4 cup berry jam preserves
1 Tbsp. olive oil
1 Tbsp. red wine vinegar
1 tsp cumin
1 tsp paprika
salt & pepper to taste

Preparation

Bring vegetable broth to a simmer in large skillet

Add asparagus spears

Lay salmon fillets on top of spears and season with salt & pepper

Cover and simmer for 7-8 minutes

While the asparagus and fish is simmering, combine the ingredients for the glaze

Remove skillet from the heat and spoon the glaze onto the salmon

Place under broiler for about 2-3 minutes, or until glaze is bubbling

Serve immediately
