Chiquetaille De Morue (Haitian Salt Cod Salad)

Ingredients

2 pounds dried salt cod, boned
1 cabbage, shredded
3 carrots, shredded
6 onions, shredded
Hot peppers (habaneros), shredded (or leave whole, pricked with a fork)

Preparation

Break up fish and put in boiling water for 1-2 minutes.

Remove from water, pound and dry with paper towels.

Shred fish.

Combine all ingredients and toss with a little olive oil.

On the second day, drain and add vinegar and oil to taste.

Serve cold, on crackers or slices of French bread as an appetizer.

Make at least 1 day ahead. Keeps indefinitely in a large glass jar in the refrigerator.
