Fresh Tomato Salsa

Ingredients

3 Firm, ripe tomatoes, cored and peeled
1 tablespoon Finely-chopped salad onion or shallots
4 Fresh basil leaves, finely chopped or shredded
2 tablespoons tsp To 1 light olive oil
1 tablespoon Lemon juice
Few drops balsamic vinegar, (optional)
Salt and freshly milled black pepper

Preparation

Halve the tomatoes and gently squeeze away the seeds. Cut the flesh into tiny dice and place in a small mixing bowl. Add the onion, basil leaves, oil, lemon juice and a few drops balsamic vinegar (if using) and mix gently.

Chopped parsley or coriander could be substituted for the parsley
