As this edition of Wheatless Wednesday winds down, I present this simple and satisfying recipe for cookies with no grains of any kind.
2 cups ground almonds
¼ cup maple syrup
1 tsp Himalayan salt
1 tsp cinnamon
1/2 tsp cardamon
Optional: dark chocolate or carob chips (just mix in "batter")
Directions: Combine all ingredients. Then roll into 2-inch balls and press down with fork tines. Bake n for 10-12 minutes at 300. enjoy!
