"If I make a colorful summer salad, the sun is bound to come out. Right?" This is the sort of wishful thinking that's been going on in my head the last few days here in rainy, struggling-to-be-spring Seattle. The neighbors won't think I'm crazy if they catch me doing a sun dance. Sadly, they understand all too well. I bet they'll even join me. Regardless of our June Gloom I'm remaining steadfast in my optimism that the sun will shine and that we will soon get to dine outside. So for inspiration I've put together some fun salads to usher in the coming summer season like the Vegetarian Spring Rolls with Garlic Lime Sauce (call them salad rolls if you like), a beautiful Strawberry-Mango Quinoa Salad, or Avocado Halves Stuffed with Shrimp and Grapes.
