Tahini is finely pureed sesame seeds. It is used a dressing or flavoring in salads, casserole, broiled vegetables or used as a condiment. One of the most popular dishes that uses tahini is traditional hummus.
Originating in ancient Persia, tahini is still found as a popular ingredient in many Middle Eastern cuisine, and is even popular as a condiment when combined with a little lemon, salt and garlic.
Because authentic tahini contains no emulsifiers, many time the oil and sesame paste will separate over time, requiring remixing before use.
